MYTH #1: BEER IS BEST SERVED AS COLD AS POSSIBLE

FACT: FLAVOR EMERGES WITH A BIT OF WARMTH

This is TRUE! We’ve all been stooped by advertising campaigns by Budweiser and Coors Light. The advertisement bottles are cold enough to drink when the mountains on the bottle turn from white to blue. Beer is actually best consumed warmer, around 46 to 50°F. You will normally see draft beer served between 38 and 42°F. Flavor and aroma are reduced when it is cold. You can warm the beer by cupping it in your hand for a couple minutes and your beer will be at the right temperature. Now you’ll actually taste the flavor of the beer.

Check out this awesome Cobra Ice Tower being installed at a popular local fish market down the street from our office. We eat at Bear Flag Fish Co., in Newport Beach CA, at least twice a week. This place has the best ahi poke and fish tacos you’ll ever have. This ice tower is specially set to be this cold without it interfering with the beer. The beer is insulated and protected from the ice and pours perfectly.

FIXING AN ICE TOWER

We received a call that a restaurants ice tower was not getting frosty. the beer was pouring at the right temperature. We troubleshot the systems and found the problem. We gutted the tower and tightened all the nuts, gaskets, and lines. After we adjust the regulators, the tower began to frost within an hour. The glycol machine was set to 25 degrees F.

BEER LINE CLEANING!

The line cleaning business is in high demand. Beer line cleaning is a necessary component to serving quality beers but it can be very dangerous if not done correctly. The quality and flavor can be ruined when it travels from the keg to the faucet. Yeast, beer stones, mold and bacteria are beer line enemies. Beer line cleaning chemicals are not safe for consumption; these chemicals  dissolve proteins like the skin, eyes, and throat. It is recommended and important to clean a draft beer system at a minimum of once every two weeks. The long draw systems that exceed 25ft and serve high volumes of beer should be cleaned once a week.

TIP: Professional training and good insurance is important. Be very careful and make sure whoever is cleaning the lines is a properly trained or that customer will take one swallow and off to the emergency room with a call to his lawyer.
